Is it wise to have both eyes done at the same time?
 
This is appealing to me as it means less "down" time and less apprehension.

I don't recommend to do cataract eye surgery in both eye s at the same time. Sometimes complications which are uncommon can occur after straight forward cataract surgery such as high intraocular pressure, corneal edema, severe inflammation.
 
These complications need time to subside and during this period your vision is low. So it is better to deal with these complication in one eye than deal with them in both eyes and at the same time.
